Using the cook plate, spread corn chips around the outer edge of the plate. In the centre, cook your seasoned mince with taco spices, onion and capsicum.
Once cooked:
- Spoon the mixture over the chips
- Add grated cheese
- Close the lid briefly to melt
- Top with avocado, sour cream and jalapeños

Everyone can gather around and dig straight in.
It turns your portable BBQ into a social centrepiece.
2. Simple Camp Paella (One-Pan Wonder)
Yes — you can cook paella on a portable BBQ.
Ingredients:
- 1 cup arborio or medium-grain rice
- 2 cups chicken stock
- 1 chorizo, sliced
- 200g chicken thigh, diced
- 1/2 red capsicum, sliced
- 1/2 onion, diced
- 1 tsp smoked paprika
- Pinch of saffron (optional)
- Handful of prawns
- Lemon wedges
Method:

Cook chorizo until browned, then set aside.

Ingredients:
- Pork mince
- Chow mein seasoning
- Garlic
- Spring onion
- Dumpling wrappers
- Soy sauce
- Sweet chilli sauce
Method:

Mix pork mince with chow mein spices, garlic and spring onion.

Roll into small balls and cook on the BBQ plate until browned and cooked through.

Lay dumpling wrappers directly over the top and lightly press.
